Born and raised in Banner Elk, North Carolina, Chef Chad Smith found his passion for the kitchen after stepping away from engineering school and taking a part-time dishwasher job to help a childhood friend. The energy, teamwork, and creativity of restaurant life drew him in immediately, and from that point forward, he knew he’d found his purpose.
Over nearly two decades in professional kitchens, Smith has built his career on equal parts discipline, curiosity, and heart. His philosophy is simple: great food starts with genuine connection. Every dish begins with the people it’s for - the guests, the occasion, and the emotion behind the meal. From there, he builds with intention, letting seasonality and storytelling shape the menu.
At Indaco, Smith brings a sense of creativity and warmth to every plate, pairing thoughtful technique with a deep respect for the craft. He thrives on developing new flavors and creating memorable dining experiences, while mentoring his team to approach food with both precision and passion.
Outside the kitchen, Smith enjoys cooking and creating with his daughter, sketching, and finding quiet moments on his porch in Charlotte with his cat, Ivan.
