Executive Chef

Originally from Durango, Colorado, Executive Chef Nicholas Wilber discovered his passion for hospitality through years learning in restaurant kitchens, where experience, mentorship and curiosity became his greatest teachers. Inspired by his European grandmothers, childhood days spent in the garden, and relationships with local farmers, Wilber developed an appreciation for thoughtful cooking rooted in seasonality, community and genuine hospitality.

Today, Chef Nicholas leads the kitchen at Indaco Atlanta with a philosophy that begins with the seasons. Guided by Indaco's ethos and a commitment to sourcing from local farmers and producers whenever possible, he believes ingredients should be celebrated at their peak. Each dish is created with intention, asking not only how it tastes, but how it reflects the restaurant's identity and contributes to the guest's overall experience. His Italian-Mediterranean approach embraces simple, honest cooking where exceptional ingredients take center stage.

Outside of the kitchen, Wilber enjoys discovering new destinations and cultures through travel, exploring hidden corners of Atlanta, spending time outdoors with his dog, Apollo Lincoln, and fitting in a round of golf whenever he can. Whether mentoring the future generations, sharing a meal or swapping stories around the table, he believes hospitality is ultimately about creating meaningful connections through food.
